Apricot kernel oil salad dressing

3 tbsp apricot kernel oil
1 tbsp freshly squeezed lime or lemon juice
1 tsp honey
1 tsp fig mustard
Rock salt and freshly ground black pepper
It goes great on finely grated fennel, and for an exotic touch you can sprinkle everything with a teaspoon of dried pomegranate seeds.
