Bean salad with mustard oil
Ingredients:
200g cooked beans
1 small red onion
1 tbsp mustard oil
1 tsp lemon juice
Fresh herbs (e.g. parsley or coriander)
Salt
pepper
Preparation:
Finely dice the onion and place it in a bowl together with the beans and herbs.
Season with mustard oil, lemon juice, salt and pepper and mix well.
Let it steep briefly to allow the aromas to develop.
Ideal as a fresh side dish to grilled dishes or as a light, spicy summer dish.
