Origin and manufacturing process

Our ghee is made from raw milk butter from the Bachtel dairy in the Zurich highlands, because the quality of the milk and the animal husbandry play a crucial role in the final product. There are various, sometimes very complex, methods for producing butterfat. Generally, the butter is melted, allowing the water to evaporate first. Then, the milk solids, which rise to the surface in a foamy layer, are skimmed off. What remains is clarified butter, which consists of almost 100 percent fat. Since the lactose has been removed, ghee is a good butter alternative for people with lactose intolerance. Furthermore, unlike many other fats, it can be heated to high temperatures, up to 250 degrees Celsius. While butter becomes rancid and must be refrigerated, ghee has an extremely long shelf life and does not require refrigeration.

Ghee is suitable for cooking, frying, braising, and baking, and its nutty, buttery flavor complements almost any dish. It is particularly common in Indian, Pakistani, and Afghan cuisine. However, due to its high fat content, it should be consumed in moderation to avoid excessive calorie intake. Does ghee need to be stored in the refrigerator?

No, ghee does not need to be refrigerated. The removal of water and milk proteins makes it very shelf-stable. A dry place is sufficient.

How long does ghee keep?

Unopened ghee can be stored for many months to years. Once opened, it will remain fresh for several months to a year if stored correctly (airtight, dry, away from direct sunlight).

Can ghee go bad?

Ghee is very stable, but can become rancid if exposed to moisture or dirt. If it smells unpleasant or the color appears unusual, it should no longer be used.
Tip: Use a clean metal spoon rather than a wooden spoon to scoop the ghee out of the jar.

What is the difference between ghee and butter?
