Cold-pressed high-oleic sunflower oil for frying and baking

We produce our frying oil from high-quality, high-oleic sunflower seeds, offering a cold-pressed oil option for hot cooking. Whether frying or baking, this mild oil is the ideal all-rounder for anything that needs to be heated.

 

What does high oleic mean?
High Oleic translates as "rich in oleic acids." Oils with this characteristic have a particularly high proportion of monounsaturated fatty acids, i.e., oleic acid. Because monounsaturated fatty acids are more heat-stable than polyunsaturated fatty acids, their smoke point is significantly higher, allowing them to withstand higher temperatures. Gold Ölmühle's frying oil is made from very special, specially bred high-oleic sunflowers. Suitable plants were propagated from a Russian mutation to alter the fatty acid pattern—this process is entirely genetically engineered. Traditional sunflower oil has a fatty acid distribution of approximately 10 percent saturated fatty acids, 30 percent monounsaturated fatty acids, and 60 percent polyunsaturated fatty acids. Because of the latter, the oil is unsuitable for heating. With the special high-oleic sunflowers, the distribution is different: approximately 10 percent saturated fatty acids, 10 percent polyunsaturated fatty acids, and 80 percent monounsaturated fatty acids, which give the oil its heat resistance. The monounsaturated fatty acid content can vary depending on the plant, but is usually between 75 and 90 percent. Since it is often heated anyway, it is rarely found commercially from the cold-pressed process. However, we want to preserve as many of the ingredients as possible and generally only work with the cold-pressed process, which is why we offer a virgin high-oleic sunflower oil in our shop.

We source our sunflower seeds from sustainable, pesticide-free Swiss farms in Unterkulm. We know our supplier and their farming methods personally and are proud of our Swiss-made product, which is produced entirely in Switzerland from cultivation to the oil in the bottle. The seeds are cold-pressed in our factory in Zurich, producing native high-oleic sunflower oil at a maximum outlet temperature of 34 degrees Celsius.

High-oleic sunflower oil in use

We typically recommend our customers not to heat cold-pressed oils. This is the only way to ensure that valuable ingredients are preserved. Furthermore, the intense heating process in conventional virgin oils can cause polyunsaturated fatty acids to develop into unhealthy substances such as trans fatty acids, free radicals, or even potentially carcinogenic substances. This is why it's so important to use high-oleic sunflower oil for hot dishes. Its mild flavor makes it suitable for many uses: for searing meat or vegetables, for deep-frying, or for baking as a vegetable fat alternative. This oil is our all-rounder in the shop for any recipe that requires heat.
